Plyto: an ancient variety at the edge of disappearance.

Plyto is one of Crete’s most ancient indigenous white grape varieties, deeply connected to the island’s early viticultural history. Native to the region of Heraklion, it was historically cultivated across large parts of central and eastern Crete. Over time, its presence diminished significantly, bringing the variety close to extinction.

Today cultivation is largely concentrated in the wider Heraklion zone. The total surface of actively cultivated Plyto vineyards is estimated at approximately three to four hectares, classifying it as an exceptionally rare and valuable grape variety.

The decline can be attributed to vineyard abandonment, changing agricultural practices, the replacement of traditional varieties with higher-yielding cultivars and Plyto’s naturally lower productivity. Preservation therefore depends not only on planting more vines, but on understanding the exact conditions under which the variety remains balanced and expressive.

Preservation is not nostalgia. It is the disciplined work of understanding what must remain alive.
02 / Cultivation

Characteristics and cultivation.

Plyto is a thin-skinned variety with a delicate skin-to-pulp ratio. It is particularly sensitive to excessive sunlight, wind exposure and prolonged drought, making site-adapted cultivation essential.

Training and pruning

Traditional bush-vine, or gobelet, systems have proven especially suitable under Cretan conditions. The form naturally shades the clusters from intense solar radiation while supporting gradual and balanced ripening. Vines are typically pruned to two to four buds per spur, maintaining controlled yields and vine balance.

Canopy as protection

Plyto benefits from a gentle canopy strategy rather than aggressive leaf removal or high trellising. Sufficient foliage protects the fruit from sunburn and excessive transpiration, creating a stable microclimate that supports steady sugar accumulation, acid retention and balanced phenolic development.

Selective thinning near the base improves airflow and reduces local humidity without exposing clusters to excessive sun. In Crete’s semi-arid climate, balanced canopies also reduce evapotranspiration and improve water-use efficiency.

03 / Vineyard zones

Vineyard villages: defining distinct zones.

Θ{έρως} currently follows six Plyto vineyards in eastern and western parts of central Crete. The long-term objective is to classify them into clearly defined zones—“vineyard villages”—so the variety can be studied across altitude, exposure, soil composition and vine age.

Higher-altitude vineyards generally produce fruit with increased acidity and slower ripening. Lower-altitude sites favour more advanced aromatic and phenolic development. Ungrafted vines over 80 years old typically show lower yields and naturally balanced sugar-to-acid ratios, while younger grafted vineyards often give brighter aromatics and fresher acidity.

Peza · 300–400 m
Limestone-based sandy-clay and sandy-silt soils. Two vineyards, one over 100 years old. Slow ripening, depth and naturally retained acidity.

Zone 6

North-West Heraklion · 600–700 m
A high-elevation, wind-exposed site on red clay-rich soils. Pronounced acidity, low pH, tension and a subtle botanical character.

Zone 1

South-West Heraklion · 650 m
Three adjacent parcels on clay-loam soils with high calcium carbonate. Citrus, white flowers and herbal precision.

04 / The future

Zoning for sustainability.

The long-term vision is to refine and formalise vineyard zoning, establishing recognised terroirs that can serve as benchmarks for future plantings. Linking wine profiles to specific growing conditions reinforces consistency, traceability and authenticity while protecting the identity of the variety.

Plyto and climate change

Plyto’s long adaptation to Crete has given it valuable tolerance to heat, drought and limited water availability. Its capacity to maintain acidity and aromatic balance under pressure makes it particularly relevant to the future of Mediterranean viticulture.

Global recognition and preservation

Preserving Plyto safeguards both biodiversity and cultural memory. Its significance lies in offering a wine language that stands apart from standardised international styles.
