Θ{έρως} was founded in 2020 to revive and bring forward rare and forgotten Cretan varieties. The work begins in the vineyard: with old genetic material, low-yielding sites and places capable of expressing a distinct identity.
The collection follows a vineyard-specific philosophy. Every cuvée is traceable to an identified site; the relationship between variety, soil, altitude, exposure and microclimate is treated as the wine’s central architecture.
Low-intervention protocols and precise modern techniques protect freshness, depth and longevity. Very small production is not scarcity for its own sake—it is the scale required to work closely, transparently and without erasing origin.
A future for Plyto.
Once widespread across Crete, Plyto came close to extinction. Today only a few hectares remain. Our work follows six individual vineyards across distinct altitudes, soils and exposures, turning preservation into a long-term study of terroir.
